The place
Gialgone hides on a forested slope off the main flow of the trail, and that's precisely its charm. Where the park refuges hum with the logistics of forty hikers, this small private bergerie offers something scarcer: quiet. You arrive through pine and beech shade to a clearing with a few simple buildings, woodsmoke drifting, and a welcome that operates at shepherd speed — unhurried, direct, genuine.
The cooking is simple mountain fare and tastes the way food does when you've earned it and someone made it near a fire. Nights here are among the darkest and stillest on the whole route; you'll hear the forest settle, and not much else. Booking is by phone, and it's worth the small effort of arranging: choosing Gialgone over a busier stop is the difference between spending an evening in a queue and spending it in Corsica.
